Today we will discuss the sheet pan lemon chicken with capers & potatoes. The total time to prepare the recipe is an hour. The ingredients for the following recipe are as follows potatoes, tomatoes, capers, lemon, olive oil, cumin, garlic, salt, chicken thighs, black pepper, and fresh basil.

2Cherry tomatoes—– 2 cups
3Capers——3 tsp
4Lemon—– 1 large
5Olive oil——3 tsp
6Garlic clovesChopped2 large
7SaltKosherAs to taste
8Chicken thighs—– 2 ½ pounds
9Black pepper—– As to taste
10Fresh basil—– 1/3 cups

Steps to make the sheet pan lemon chicken

Step 1: Preheat the oven to about 400F. Slice the potatoes into rounds.

Step 2:  Adding the ingredients

 Now assemble the tomatoes, capers & potatoes on a baking sheet.

Step 3: Making lemon dressing & coat veggies

Take a small bowl and squeeze half of the lemon in it. Reserve the half lemon for later. Now add the cumin, salt, olive oil, and garlic and whisk. Coat the potatoes with this. The mix will with the hands. Assemble all the ingredients into a single layer.

Step 4: Season the Chicken

Take the chicken and season it with salt and black pepper on both sides.

Step 5: Assemble all the ingredients

Now add the chicken thighs to the baking sheet amongst the tomatoes and potatoes.

Step 6: Bake the chicken & vegetables

Bake it for about 35 to 40 minutes. in the meanwhile brush the chicken with pan juice. The recipe is done when the potatoes turn brown & the chicken is tender.

 Step 7: Garnish & serve

Scatter the basil and add the remaining lemon wedges to the baking sheet & serve.
