Today we will discuss the Spanish Migas with fried eggs. The ingredients required for the recipe are as follows white bread, bacon, dry-cured chorizo, smoked paprika, garlic, onion, bell pepper, tomatoes, olive oil, eggs, fresh parsley, black pepper.

Steps to make the Spanish Migas
Step 1: Preparing the bread
Cut the bread into small pieces. Spread on the cutting board and sprinkle some salt on it. Now spray some water on it to make it damp. You can also use your fingers to damp the bread. Cover the bread with a dish towel and set it aside.
Step 2: cooking the Chorizo & bacon
Take a skillet & put it on medium heat. Now add the bacon to it & cook it for 4 to 5 minutes. then add the chorizo and ½ paprika & cook for 2 minutes. leave the bacon fat in the pan & transfer the meat to the plate.
Step 3: fry the bread
Cook the garlic over low medium until it turns golden. Then remove from the pan. Now add the bread cubes to the pan and fry it in the bacon fat till it’s golden and crispy.
Step 4: Cooking the vegetables
Take a cooking pan & add the onion & pepper to it stir it and cook for about 3 to 4 minutes. now add the tomatoes & asparagus to the pan cook it for 4 to 5 minutes.
Step 5: Fry the eggs
In a large non-stick skillet and some olive oil and heat for 1 minute. Crack the eggs into it cook for 1 to 2 minutes.
